Soft Mint Chocolate Chip Cookies

If you’re a mint chocolate chip ice cream fan, these cookies are about to become your new favorite treat. They have that cool, refreshing mint flavor paired with rich chocolate chunks, all wrapped up in a soft, bakery-style cookie that stays chewy in the center. The combination is simple, nostalgic, and surprisingly hard to resist.

What I love most about these mint chocolate chip cookies is that they feel a little more special than your everyday chocolate chip cookie without requiring any fancy techniques. The mint adds a fresh twist, while the chocolate keeps everything balanced and indulgent. They’re perfect for holiday cookie trays, St. Patrick’s Day celebrations, or honestly just because you’re craving something sweet and a little different.

Ingredients Method Notes

Ingredients

  • * 1 cup unsalted butter softened
  • * 3/4 cup granulated sugar
  • * 3/4 cup light brown sugar packed
  • * 2 large eggs
  • * 1 1/2 teaspoons mint extract
  • * 2-3 drops green food coloring optional
  • * 2 3/4 cups all-purpose flour
  • * 1 teaspoon baking soda
  • * 1/2 teaspoon baking powder
  • * 1/2 teaspoon salt
  • * 1 1/2 cups semi-sweet chocolate chips
  • * 1/2 cup mini chocolate chips optional

Method

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  2. In a large bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the mint extract and food coloring if using.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Fold in the chocolate chips and mini chocolate chips.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 9-11 minutes, or until the edges are lightly golden and the centers still look slightly soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

* Use pure mint extract rather than peppermint extract for a smoother, classic mint chocolate chip flavor.
* For thicker cookies, chill the dough for 30 minutes before baking.
* Add chopped Andes mints for extra mint flavor.
* Store in an airtight container at room temperature for up to 5 days.
* Freeze baked cookies for up to 3 months.
* A few drops of green food coloring give the cookies their signature mint chocolate chip ice cream look, but it’s completely optional.

How To Make Mint Chocolate Chip Cookies

Step 1: Prepare Your Baking Sheets

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking and ensure even baking.

Step 2: Cream the Butter and Sugars

In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until the mixture is light, fluffy, and creamy. This step helps create soft, tender cookies.

Step 3: Add the Wet Ingredients

Mix in the eggs one at a time, followed by the mint extract and a few drops of green food coloring if desired. Continue mixing until everything is fully combined.

Step 4: Combine the Dry Ingredients

In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until a soft cookie dough forms.

Step 5: Fold in the Chocolate Chips

Using a spatula or wooden spoon, gently fold the chocolate chips or chopped chocolate into the dough. Make sure they’re evenly distributed throughout the mixture.

Step 6: Scoop the Dough

Use a cookie scoop or tablespoon to portion the dough into evenly sized balls. Place them about 2 inches apart on the prepared baking sheets to allow room for spreading.

Step 7: Bake Until Just Set

Bake the cookies for 9–11 minutes, or until the edges are lightly golden and the centers still look slightly soft. Avoid overbaking for the best chewy texture.

Step 8: Cool on the Baking Sheet

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. They will continue setting as they cool.

Step 9: Serve and Enjoy

Once completely cooled, serve the cookies with a cold glass of milk, a cup of coffee, or your favorite hot chocolate. Store leftovers in an airtight container to keep them soft and fresh.

The Bottom Line

These soft mint chocolate chip cookies are the perfect combination of cool, refreshing mint and rich chocolate in every chewy bite. Whether you’re baking them for a holiday gathering, cookie exchange, or simply satisfying a sweet craving, they’re guaranteed to disappear quickly from the cookie jar.
