Brownie Ice Cream Cake

This Brownie Ice Cream Cake combines rich homemade brownies with layers of creamy ice cream for an unforgettable frozen dessert. Perfect for birthdays, summer celebrations, or whenever you want a show-stopping treat that's surprisingly easy to make.

Ingredients
  

  • For the Brownie Layers:
  • * 1 box brownie mix plus ingredients listed on package
  • * Cooking spray or parchment paper for pans
  • For the Ice Cream Filling:
  • * 1.5 quarts chocolate ice cream softened
  • * 1.5 quarts vanilla ice cream softened

Method
 

  1. Preheat the oven according to the brownie mix package directions. Prepare two 8-inch or 9-inch round cake pans by greasing them or lining with parchment paper.
  2. Mix the brownie batter according to package instructions. Divide the batter evenly between the prepared pans.
  3. Bake until the brownies are set and a toothpick inserted near the center comes out with a few moist crumbs. Allow the brownies to cool completely.
  4. Remove the ice cream from the freezer and let it soften for 10 to 15 minutes until spreadable.
  5. Place one brownie layer on a freezer-safe serving plate or inside a springform pan.
  6. Spread the chocolate ice cream evenly over the brownie layer. Smooth the surface with a spatula.
  7. Add the vanilla ice cream on top of the chocolate layer and spread evenly.
  8. Carefully place the second brownie layer over the ice cream and gently press into place.
  9. Cover the cake and freeze for at least 4 hours, or overnight, until completely firm.
  10. Before serving, decorate with whipped topping, chocolate syrup, chocolate shavings, cookies, or your favorite toppings.
  11. Let the cake sit at room temperature for 5 to 10 minutes before slicing. Serve immediately.

Notes

* Use any combination of ice cream flavors to make the cake your own.
* For cleaner slices, run a sharp knife under hot water and wipe dry between cuts.
* Assemble the cake in a springform pan for perfectly straight sides.
* The cake can be made up to 3 days in advance and stored tightly covered in the freezer.
