Method
- Preheat the oven according to the brownie mix package directions. Prepare two 8-inch or 9-inch round cake pans by greasing them or lining with parchment paper.
- Mix the brownie batter according to package instructions. Divide the batter evenly between the prepared pans.
- Bake until the brownies are set and a toothpick inserted near the center comes out with a few moist crumbs. Allow the brownies to cool completely.
- Remove the ice cream from the freezer and let it soften for 10 to 15 minutes until spreadable.
- Place one brownie layer on a freezer-safe serving plate or inside a springform pan.
- Spread the chocolate ice cream evenly over the brownie layer. Smooth the surface with a spatula.
- Add the vanilla ice cream on top of the chocolate layer and spread evenly.
- Carefully place the second brownie layer over the ice cream and gently press into place.
- Cover the cake and freeze for at least 4 hours, or overnight, until completely firm.
- Before serving, decorate with whipped topping, chocolate syrup, chocolate shavings, cookies, or your favorite toppings.
- Let the cake sit at room temperature for 5 to 10 minutes before slicing. Serve immediately.
