Whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt in a bowl. Set aside.
Beat the butter and brown sugar together until fluffy, about 2 minutes. Beat in the molasses and egg until combined.
Add the dry ingredients and mix on low speed until just combined.
Cover the dough and chill for 1 hour, until firm enough to scoop.
Preheat the oven to 350°F and line two baking sheets with parchment.
Scoop the dough into 1½-tablespoon balls, roll in granulated sugar, and place 2 inches apart on the sheets.
Bake for 9–10 minutes, until the edges are set but the centers still look slightly underdone.
Cool on the pan for 5 minutes before transferring to a wire rack.
