Chocolate Peppermint Freezer Pie Recipe

Ingredients
  

  • 1 9-inch prepared chocolate cookie crust
  • 10 oz semisweet chocolate chips
  • 1 8 oz package cream cheese, softened
  • 1 cup powdered sugar
  • cups heavy cream cold
  • ¾ teaspoon peppermint extract
  • ¼ cup crushed peppermint candies for topping

Method
 

  1. Melt the chocolate chips in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth, about 90 seconds. Let cool for 5 minutes.
  2. In a large bowl, beat the cream cheese and powdered sugar together until smooth and fluffy, about 2 minutes.
  3. Beat in the melted chocolate until fully combined.
  4. In a separate bowl, whip the heavy cream and peppermint extract to stiff peaks, about 3 minutes.
  5. Fold the whipped cream into the chocolate mixture in two additions, being careful not to deflate it.
  6. Spread the filling into the crust and smooth the top.
  7. Freeze uncovered for 1 hour, then cover and freeze at least 3 more hours, until firm.
  8. Top with crushed peppermint candies just before slicing.
