Cookie Monster Cake Mix Cookies

These fun and colorful Cookie Monster Cake Mix Cookies are soft, chewy, and loaded with chocolate chips. Made with a simple cake mix base, they're an easy dessert that's perfect for birthday parties, bake sales, after-school treats, or anytime you want a playful cookie everyone will love.

Ingredients
  

  • * 1 box white cake mix 15.25 ounces
  • * 2 large eggs
  • * ⅓ cup vegetable oil
  • * Blue gel food coloring
  • * 1 cup semi-sweet chocolate chips
  • * ½ cup crushed chocolate sandwich cookies optional
  • * Candy eyes for decorating optional

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine the cake mix, eggs, and vegetable oil until a thick dough forms.
  3. Add blue food coloring a little at a time until the desired Cookie Monster blue color is achieved.
  4. Fold in the chocolate chips and crushed sandwich cookies if using.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 9 to 11 minutes, or until the edges are set and the centers still look slightly soft.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  8. If desired, decorate with candy eyes and additional chocolate chips while the cookies are still slightly warm.
  9. Cool completely before serving or storing.

Notes

  •  Do not overbake. The cookies will continue to set as they cool.
  • Gel food coloring produces a brighter blue color without thinning the dough.
  • For an authentic Cookie Monster look, press extra cookie pieces into the tops before baking.
  • Store in an airtight container at room temperature for up to 4 days.
  • These cookies freeze well for up to 2 months.
  • White cake mix works best for achieving the bright blue color, but vanilla cake mix can also be used.
