Preheat the oven to 350°F and line a baking sheet with parchment.
Whisk together the almond flour, gluten-free flour blend, and salt in a bowl.
Beat the butter and ½ cup powdered sugar together until light, about 2 minutes. Beat in the vanilla.
Add the dry ingredients and mix on low speed until a soft dough forms. Fold in the chopped almonds.
Roll the dough into 24 balls, about 1 tablespoon each, and place 1½ inches apart on the sheet.
Bake for 13–14 minutes, until the bottoms are lightly golden but the tops stay pale.
Cool for 5 minutes, then roll each warm cookie in the remaining powdered sugar. Let cool completely, then roll a second time.
