Raspberry Fudge Parfaits

These Raspberry Fudge Parfaits are an easy no-bake dessert featuring layers of rich chocolate fudge, fluffy whipped cream, and fresh raspberries. Perfect for holidays, dinner parties, or whenever you're craving a simple yet elegant sweet treat.

Ingredients
  

  • * 2 cups fresh raspberries
  • * 1 cup semi-sweet chocolate chips
  • * 1/2 cup heavy cream for fudge layer
  • * 2 cups heavy whipping cream
  • * 2 tablespoons powdered sugar
  • * 1 teaspoon vanilla extract
  • * Chocolate shavings for garnish (optional)
  • * Extra raspberries for garnish

Method
 

  1. Set aside a few raspberries for garnish. Lightly mash the remaining raspberries if desired.
  2. Place the chocolate chips and 1/2 cup heavy cream in a microwave-safe bowl. Heat in 20-second intervals, stirring between each, until smooth and glossy. Let cool slightly.
  3. In a large mixing bowl, whip the 2 cups heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  4. Spoon a layer of chocolate fudge into the bottom of each serving glass.
  5. Add a layer of raspberries over the fudge.
  6. Top with a layer of whipped cream.
  7. Repeat the layers until the glasses are filled, ending with whipped cream.
  8. Garnish with fresh raspberries and chocolate shavings if desired.
  9. Refrigerate for at least 30 minutes before serving.

Notes

* Frozen raspberries can be used if thawed and drained well.
* For extra chocolate flavor, drizzle chocolate sauce between layers.
* These parfaits can be prepared up to 24 hours in advance.
* Clear glasses showcase the beautiful layers best.
* For a lighter version, substitute whipped topping for homemade whipped cream.
