Tiramisu Chia Pudding

Ingredients
  

Chia Pudding Layer
  • 1 cup milk (dairy or almond milk works well)
  • 3 tablespoons chia seeds
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant espresso powder
Mascarpone Cream Layer
  • 1/3 cup mascarpone cheese
  • 2 tablespoons Greek yogurt
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract
For Topping
  • Unsweetened cocoa powder for dusting
  • Dark chocolate shavings (optional)
  • A few crushed ladyfinger cookies (optional but delicious)

Method
 

  1. In a medium bowl or jar, whisk together the milk, chia seeds, maple syrup, vanilla extract, and espresso powder until well combined.
  2. Allow the mixture to sit for 5 minutes, then stir again to prevent clumping.
  3. Cover and refrigerate for at least 4 hours or overnight, until the mixture becomes thick and pudding-like.
  4. In a small bowl, whisk together mascarpone cheese, Greek yogurt, powdered sugar, and vanilla until smooth and creamy.
  5. Spoon a layer of the chilled chia pudding into serving glasses or jars. Add a layer of mascarpone cream on top.
  6. Add another spoonful of chia pudding followed by a final dollop of mascarpone cream to mimic the layered look of classic tiramisu.
  7. Dust the top with cocoa powder and sprinkle with chocolate shavings or crushed ladyfinger cookies before serving.
