Cookies & Cream Truffle Bites

If there’s one dessert that never sticks around for long, it’s these cookies and cream truffle bites. They’re rich, creamy, chocolate-coated, and made with just a few simple ingredients. Best of all, there’s no baking involved, making them perfect for busy days when you want something sweet without the extra work.

I love keeping a batch in the fridge for parties, holiday trays, or those late-night chocolate cravings. They look elegant enough for special occasions but are secretly one of the easiest treats you can make. One bite, and it’s easy to see why they’re always the first dessert to disappear.

Ingredients Method Notes

Ingredients

  • * 36 chocolate sandwich cookies such as Oreos
  • * 8 ounces cream cheese softened
  • * 12 ounces semi-sweet chocolate milk chocolate, or candy melts
  • * 2 tablespoons crushed cookie crumbs for garnish (optional)
  • * Sprinkles or chocolate drizzle for decorating (optional)

Method

  1. Place the chocolate sandwich cookies in a food processor and pulse until they become fine crumbs.
  2. Add the softened cream cheese and process until a thick dough forms and the mixture is fully combined.
  3. Scoop the mixture into 24 equal portions and roll into balls.
  4. Arrange the balls on a parchment-lined baking sheet and refrigerate for 30 minutes or freeze for 15 minutes.
  5. Melt the chocolate in a microwave-safe bowl, heating in 20-second intervals and stirring between each interval until smooth.
  6. Dip each chilled truffle into the melted chocolate, coating completely.
  7. Place the coated truffles back onto the parchment-lined baking sheet.
  8. Immediately sprinkle with crushed cookies or decorations if desired.
  9. Refrigerate until the chocolate coating is fully set.
  10. Serve chilled or at room temperature.

Notes

* Full-fat cream cheese provides the smoothest texture.
* Chilling the truffles before dipping helps prevent them from falling apart.
* White chocolate, dark chocolate, or colored candy melts all work well for coating.
* Store in an airtight container in the refrigerator for up to 1 week.
* These truffles can be frozen for up to 2 months. Thaw overnight in the refrigerator before serving.
* For extra cookies-and-cream flavor, mix a few tablespoons of cookie crumbs into the melted chocolate drizzle.

How to Make Cookies & Cream Truffle Bites

Crush the Cookies

Place the chocolate sandwich cookies in a food processor and pulse until they turn into fine crumbs. If you don’t have a food processor, seal the cookies in a zip-top bag and crush them with a rolling pin.

Mix the Filling

Add the softened cream cheese to the cookie crumbs and mix until a thick, smooth dough forms. Make sure there are no large streaks of cream cheese remaining.

Roll Into Balls

Scoop out portions of the mixture and roll them into evenly sized balls. Place them on a parchment-lined baking sheet or plate as you work.

Chill the Truffles

Refrigerate the truffle balls for about 30 minutes, or freeze them for 15 minutes, until they are firm enough to dip in chocolate.

Melt the Chocolate

Place the chocolate or candy melts in a microwave-safe bowl. Heat in short intervals, stirring frequently, until the chocolate is completely melted and smooth.

Coat Each Truffle

Using a fork or dipping tool, lower each chilled truffle into the melted chocolate. Gently tap off the excess coating before returning the truffle to the lined baking sheet.

Add Toppings

Before the chocolate sets, decorate the truffles with crushed cookies, festive sprinkles, chocolate drizzle, or any toppings you like.

Let Them Set

Allow the chocolate coating to harden completely. You can speed up the process by placing the tray in the refrigerator for a few minutes.

Serve or Store

Enjoy the truffles right away or store them in an airtight container in the refrigerator until you’re ready to serve. They taste even better after they’ve chilled for a few hours.

The Bottom Line

These Cookies & Cream Truffle Bites prove that sometimes the simplest desserts are the most memorable. With their rich cookies-and-cream filling and smooth chocolate coating, they’re perfect for everything from holiday gatherings to casual weekend treats.
