Store in an airtight container in the refrigerator for up to 5 days.

How to Make Raspberry Cheesecake Cake Mix Cookies

Step 1: Make the Cheesecake Filling

Beat the softened cream cheese and powdered sugar together until completely smooth and creamy. Scoop small teaspoon-sized portions onto a parchment-lined plate or baking sheet, then freeze until firm enough to handle.

Step 2: Mix the Cookie Dough

In a large mixing bowl, combine the vanilla cake mix, eggs, and vegetable oil. Stir until a soft, thick cookie dough forms with no dry spots remaining.

Step 3: Add the Raspberry Flavor

Gently fold the raspberry preserves or freeze-dried raspberry pieces into the dough. Mix just enough to distribute the flavor without overworking the dough.

Step 4: Scoop the Dough

Using a cookie scoop or spoon, portion the dough into evenly sized balls. Flatten each portion slightly in the palm of your hand.

Step 5: Stuff with Cheesecake Filling

Place a frozen cheesecake filling piece in the center of each flattened dough portion. Carefully wrap the dough around the filling, sealing the edges completely so the filling stays inside while baking.

Step 6: Chill the Cookie Dough Balls

Arrange the filled cookie dough balls on a parchment-lined baking sheet. Refrigerate for 15 to 20 minutes to help the cookies hold their shape during baking.

Step 7: Bake Until Set

Bake in a preheated 350°F (175°C) oven for 10 to 12 minutes, or until the edges are lightly golden and the centers look just set.

Step 8: Cool Before Serving

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9: Enjoy

Serve the cookies slightly chilled or at room temperature. The creamy cheesecake center paired with sweet raspberry flavor makes every bite irresistible.
