Individual sugar cookie cups hold a swirl of tangy cream cheese filling and a few pieces of bright fruit — small enough to eat in two bites, but detailed enough to look like they took far longer than they did. These are the ones that disappear first off any dessert tray.

Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 1/2 cups sliced assorted fruit (strawberries, blueberries, kiwi, mandarin segments)
Instructions
- Preheat oven to 350°F and grease a 24-cup mini muffin tin.
- Whisk the flour, baking powder, and salt. Cream the butter and 3/4 cup sugar until fluffy, then beat in the egg and 1 teaspoon vanilla. Mix in the dry ingredients until a soft dough forms.
- Press about 1 tablespoon of dough into each muffin cup, pushing it up the sides to form a small cup shape.
- Bake 10–12 minutes, until the edges are light golden. If the centers puff up, gently press them back down with the back of a spoon while still warm.
- Cool completely in the tin before removing.
- Beat the cream cheese, powdered sugar, and 1/2 teaspoon vanilla until smooth, then pipe or spoon into each cooled cookie cup.
- Top each with a small arrangement of sliced fruit and chill 15 minutes before serving.
